Tourlife is definitely the hard life when it comes to eating healthy, but finally 7 months in - I nailed it! And in a cheap way.
If you're like me, traveling a lot, not much storage space, or don't have access to anything more to call a supermarket than a Walmart - then I hope this yummy hotel recipe helps you out too. I bought soft tortillas, avocado spread, a bell pepper & onion, and some Amy's Organic Chili. Just with a little trick of the microwave for the chili, this little dinner was a cinch. All these ingredients come in under $10 total, and I get a couple meals out of it! Originally I was scouring the aisles for refried beans, however tour bus call was getting close and I needed to get something quick. This chili might have been DESTINY since it offers so much more flavor than refried beans would have. In the end I had a satisfied tummy, good conscious about what I ate, and a happy wallet!
(p.s. - haha I clearly had no plates either ... talk about cook prep *blush*)
